After slicing the eggplants in circles, arrange them on a surface in a single layer. Sprinkle some salt and let it sit for some minutes. Then turn them and repeat salting with the other side and let it set again for some minutes.

Combine the slices in a large mixing bowl, add parmesan cheese, olive oil, black pepper, Italian seasoning, and garlic powder. These are: of course, avocado, chicken breast (which should be shredded), bell peppers, some lime juice, red onion, shredded cheddar and Monterey Jack, some sour cream, and chives. What you need to do before mixing the ingredients together: is to chop the avocados in cubes, shred the chicken breast, chop the onion and chives, remove the seeds and cores of bell peppers and chop them. Then take a mixing bowl and combine there all the ingredients mentioned. Mix them together so that all the ingredients are incorporated.

Take a tortilla and spread the mixture on its surface. Note that you must live some space on the tortilla borders. After spreading the mixture, roll the tortilla tightly and then cut small rolls.
