This no-bake energy bites recipe is just awesome. It doesn’t take too much time: the making process is quite easy and fast. It’s a healthy snack, and what is most important, it’s fantastically delicious. And like your favorite chips, you cannot stop just by eating one.

Another fascinating thing about these tiny no-bake energy bites is that you can make it using a few ingredients. Moreover, you can add whatever you want if you think that they will make your snack tastier. You don’t even need to bake it and waste lots of time on the baking process. Just mix the ingredients and roll the mixture into small energy balls, or you can shape them in a way you want using different kitchen appliances. Even if you don’t make them for immediate eating, you can press the mixture in a baking dish and store it. Then cut into energy bars the next day, serve for breakfast with tea or coffee.

Here are the ingredients that you will need to make these little bites. You can easily find them in the supermarkets. Also, want to remind you that you can also add some other ingredients while making these bites.

Rolled oats

Rolled oats will be used as the base for this recipe. This food is also known as old-fashioned oats.

Shredded Coconut

The coconut will add some extra flavor to your bites. This ingredient is needed to sprinkle on the mixture. You should shred the coconut, and I also recommend that you briefly toast them in the oven or in a pan. In case you toast it just make sure that they become cool and then sprinkle on the energy bites. Otherwise, if you add hot coconut on it, the chocolate chips included in the bites will become a bit melty.

Peanut butter

Use creamy peanut butter to make the ingredients stuck to each other. Both traditional and natural kinds of peanut butter will work great for this recipe. If you don’t have peanut butter, choose other nut butter as an alternative.

Chocolate chips

For this recipe, you should choose semisweet chocolate chips. It’s up to you to decide whether you want to make the energy bites with standard-sized or mini chocolate chips. As refers to me, I usually choose mini one as they are easier to mix with the other ingredients.

Honey

I like adding some honey in my energy bites mixture. Honey not only gives them some additional natural sweetness but also helps the ingredients to stick to each other more firmly.

Ground flaxseed

You are also welcomed to add some ground flaxseed to your energy bites. It’s always a good idea if you want to make your snack rich with protein, fiber, and omega-3s.

Chia seeds (this ingredient is optional)

It would be better if you also add a tablespoon of chia seeds to your bites. But if you don’t have it on hand, no worry. It’s not a problem, you can skip this ingredient as it is optional.

Vanilla extract

HOW TO MAKE NO-BAKE ENERGY BITES

 

The making process will just take you 20 minutes. Besides, you don’t even bake them, and it’s a great advantage for this recipe. Here I will explain step by step how to do it.

Mix. The first step is mixing the ingredients and stirring them. So, take a large mixing bowl, put all the ingredients into it, and start mixing them until it is wholly combined.

Chill. If you think you have mixed the ingredients enough, cover the mixture and put it in the refrigerator to chill it. Leave it there for 1-2 hours until it becomes wholly chilled.

Roll. Roll the balls or give it another shape. When the mixture is already chill, take by small pieces and start rolling it into balls. You can make 1-inch balls. It’s the preferable size, but you are free to decide how you want it to make.

Serve. It’s finally time to try these little energy balls. You had better enjoy it immediately after rolling them, as they will lose their shape and melt if you keep them for a long time. But if you want to store them, you can keep in the refrigerator for a week, or in the freezer for some months.

Sometimes you may have problems keeping the balls hold together. If you encounter such kind of problem, you can add more peanut butter to your mixture due to which your energy bites will become stickier. If you can’t succeed in this way too, then you can avoid making balls and just cut the mixture into small bars instead of rolling them.

VARIATIONS AND SUBSTITUTIONS FOR THE RECIPE

 

This recipe for no-bake energy bites is very flexible, and you can customize it to your desires in different ways. You can make substitutions and try them in other ways. So be creative to change it in different ways. Here are some tips from me that can be useful for making this snack.

Use different nut butter. If you don’t have peanut butter on hand or don’t like it for some reason, no worry. You can use almond butter, soy butter, cashew butter, sun butter: these all work great in place of peanut butter.

Coconut. You can also skip the coconut if you don’t like how it tastes. There are several substitutions for this ingredient too: including crushed cereal, wheat germ, whole wheat flour, granola, etc.

Substitutions for honey. Firstly, I want to mention that both cream and liquid honey will work great for this recipe. But in case you don’t want to add honey, you can use maltitol syrup or nectar instead of it.

You are also free to add some spices if you think they will add an extra flavor to your energy bites, such as cinnamon. Also, you can replace mini chocolate chips with some small berries such as blueberries, currants, raisins, why not crushed almonds or nuts. 

And once again, I want to mention that you are free to choose the shape of the bites. You can make balls or bars or use your imagination and make some other creative shapes.

INGREDIENTS

 

  1. Rolled oat – 2 cups (also called old-fashioned oats)
  2. Coconut – 2 and a half cup (shredded coconut, coconut powder, or other substitutions)
  3. Peanut Butter – 1 cup 
  4. Ground flaxseed – 1 cup 
  5. Chocolate chips – 1 cup (you can choose semisweet chocolate chips or vegan chocolate chips)
  6. Honey – 1 and a half cup (or other substitutions)

INSTRUCTIONS

 

  1. Stir the ingredients in a large mixing bowl
  2. Let it be cooled in the refrigerator for 2-3 hours or in the freeze for 30 minutes
  3. Take the mixture and start rolling it into small balls or cut into small bars.
  4. Serve immediately.

 

 

If you want to store them, please keep it in the refrigerator though I don’t think you will need this tip as long as they are so addictive that won’t last on your kitchen table more than 2-3 hours.
